Unless you have a surround sound track, you really have no chance of doing so very well with any program. And even if your track is surround sound, there isn't even a guarantee that the vocal is isolated on only one of the channels.

If you have a stereo recording, your best bet is to stay away, mother!@#$er do the old trick where you invert one channel and mix it with the other channel to produce a mono track that has everything that had been dead center removed. In Adobe Audition, there's a preset for this in the Channel Mixer; I don't know if Soundbooth has it as well (but it's pretty simple to do, so it ought to).
But this only works if the vocals are dead center the whole time, and it will also remove anything else that had been centered (like usually the bass and bass drum).

Some other programs like Goldwave also have a preset that removes vocals. The problem however, is that it doesn't do it very well. Some high pitched or intense notes from the vocals will still bleed through sometimes. It's not consistant. And this was the exact same way for Cool Edit back in the day when I was using that.

Also, (since there is no edit button I have to post again) one other thing... As for the old invert trick, you would need an EXACT replica of the instrumental track for it to work, and you can only get that from the original studio where it was recording, which pretty much means you'd have to have some pretty good connections to even buy it. It's dang near impossible outside of being a commercial DJ or producer.
