Try a video capture card lol they can be found on amazon.com for about $30.00 lol

and i am pretty sure it comes with a converter with the package.

I thought the 360 was DRM locked from capture via HDMI requirements. In which case i'd recommend writing your congressman. I could be mistaken though...

According to Wired Magazine, the Intensity card will do it fine.

Try Xilisoft Video Converter.
I usually do 624x352, and it turns out great.
