If would seem that most, if not all of my ripping software is not very well as far as quality.
What I usually have done is use a program called handbrake to rip the files, and then edit them to insert certain clips into the editor using this "btv pro" but the only way to get the clips into the editor is to export them which downgrades the quality dramatically.
Is there any suggestion about what I could do about this?

As for ripping clips...
My method is to use "0Sex" to rip the DVDs in chapter-separation mode, only selecting the chapters I want from each episode. (This is the "Hi, I'm using an iBook with a 40GB disk" method. If you have a nicely sized disk you may be able to just say "screw it" and rip all the DVDs completely - but STILL SPLIT THEM BY CHAPTER.)
After you're done with that, you can probably pull them straight into QT and export the pieces that you want. I find, however, that working with .m2v is somewhat hit-and-miss, and DV is much easier. So, run them through MacMPEG2Decoder and get DV .mov files.
Then fire up QT and start finding clips you want. Export DV files for each one by selecting a region of video, do Cmd+C,Cmd+N,Cmd+V (Copy, New Player, Paste) then Cmd+E (Export DV) and save it as a descriptive name.
A bit later you'll want something like FCP; however note that iMovie will run these .dv files perfectly. As I said you can probably use .m2v with it directly (FCP, that is) but I had a few troubles making my first AMV that way. YMMV after all
