Dancing?
In Shamanic Princess, Tiara performs a ritual "dance" at a festival. She also gets very graceful when she morphs into Giel Eldo Zameth.
Well, Perfect Blue has been mentioned, but another series called Chance Pop Session has some performances.
Maybe Legend of Himiko had something with Shino. I don't remember.

Lika already mentioned: Slayers: It's an episode from Slayers Next where Lina and Amelia do some fancy dancing and singing in a quite cute costume, thinking it's a mighty spell - but it was only a prayer for joy and fun.
Not really dancing but in some way: In Saber Rider and the Star Sheriffs, in the End of the Episode "Legend of the Santa Fe Express" April dances because she is so happy because her uncle who got hurt in this episode is getting well, in the Episode "Dooley" she presents her new clothes (could also be used for some "dancing"), in the episode "The greatest show in the new frontier" the Star Sheriffs have to help in a circus - no dancing but nice artistic shows - and in the Episodes "The Amazing Lazardo" and "Jesse's Revenge" there are Scenes where you only see Aprils and (some other persons depending on episode) Feet - loop it forward-backward-forward-backward and you have dancing (I used these scenes in one of my running projects and it looked really good)
I remember there's one Sailor Moon Episode where they are doing ballet as good as they can't
And you may also try "Hikari no Densetsu" (sorry, did only get the Japanese name and the name we know in it in Germany, "Die kleinen Superstars", did not find an English ) title - not dancing but rythmic gymnastics

Thought of some more
In Oh/Ah My Goddess, Belldandy does a couple spells (like when she revives the house) where you might consider her dancing. Also, the singing at the end of the movie.
In Blue Seed, Momiji has a singing competition with Sakura, I think that might help.
Love Hina had something with Motoko and Shinobu, right?
His and Her Circumstances has characters make some outlandish motions. That may work.
