Whatever you do, you don't want to go into news editing. Especially if you're a perfectionist like me. Although it does involve editing video and will give you experience in editing programs, it's completely different from editing AMVs. A lot quicker turnaround, no need for effects (usually), no choice in what you edit. Plus, as an intern, they only pay you in coffee and sunshine. :(

Make sure that you can use the degree you get in some kind of real job that you'll like. Then worry about AMVs.
Yeah, the AMV thesis....that was me.

I'm in a Visual Effects program at The Art Institute of Vancouver, and I found it to be really related to a lot of things done in AMVs, especially if you're into doing Photoshop and After Effects work in your videos. It's a mix of film and computer animation (I even get to have an actual Digital Editing class next semester, woot!) and I'm finding that my experience in making AMVs has really helped me get a head start on a lot of my classes, and some things I learned (such as some compositing tips) have even helped me with the AMVs I'm working on.

You'll want a Video Arts/Film major but look into film production major otherwise it's film studies which is quite different. If you do film production you'll sooner or later even come across a class on editing in theory.

We have one at this college and I just can't bring myself to joining it...partially because I don't see the point and partially because I'm not that low on the nerd scale...or maybe I'm lower.

I can't stand the people at the club at my college lol so I haven't gone for awhile.
Whatever field of editing you go into, be aware that you may lose a lot of time to actually edit AMVs. I haven't made one in almost 2 years now, and that's because I edit video for a living. When I first started editing, I was like "yeah, I just finished this project, now I can edit an AMV!" Now, IF I can even find extra time to spend the time to go through my dvds, capture/rip, and edit, most of the time I don't feel like editing anymore...because I just spent countless hours editing a clients video or something and I want to get away from the computer lol.

And like Thorblitzer said, News Editing is gonna be one of the least creative and you have only a few hours to look at the footage and put out a finished product in the same day. News creativity doesn't come through editing, but how the reporter (many times the reporter IS the editor) writes the script and shoots it...then edits it accordingly. My college has news station and I've been involved with it for a little over a year now ('tis why I still go there).

Do you like story editing, or compositing? You want to make music videos? Or do graphics for movies? Theres always demand for graphics editors/compositors. Learn After Effects and Shake for that.

Non-Linear Editing Programs to learn for:
Major Motion Pictures - Avid Symphony or Final Cut Pro (recently)
Music Videos - Avid (Symphony or DV Express) or FCP
News - Avid News
Commercials - More so Final Cut Pro
Corporate Videos - Premiere or FCP
Weddings - Mostly Premiere, or FCP
Video for the Web - Premiere or FCP

I dunno man, making an InuYasha, DBZ, Gundam, Ranma and Digimon crossover fanfic sounds like the bottom of the barrel to me.

Fuckin' anime fans!
