Have you seen the move "2001 - A Space Odyssey"? Somewhere in the very beginning (after all the monkeys I think) there is a quite long scene with all kinds of space stations and satellites floating around in space to a piece of classical music. I don't which piece it was, but listening to Johann Strauss (especially "Donauwaltzer") reminds me of it, so maybe it was by him. The effect is very nice, and makes me think it would work to make an amv with that kind of classical music to some space or mecha anime. At any rate, you probably need to find some anime that is very motion/action oriented, because there is always a lot of motion in classical music.
Also, I definitely recommend you listen to "Tritsch-Tratsch" (op. 214) by Johann Strauss. It's only 2:28 long and definitely amv material. It would make a hilarious comedy amv; it makes me picture a cat-and-mouse type of chase or fight between two characters. Or maybe you could use Battle Athletes...
