When I first started, I didn't have enough HD space to work on multiple videos. Now that I have the space, I find working on multiple videos a good thing. Sometimes I'm not in the mood to work on one video, so I can work on another. Or, if I come up with a great idea for a particular one, I can focus on that one.

I've never worked on more than one AMV at a time, and the reason for that is a very simple one: when I first got into AMV's, I didn't have any anime DVD's. And it takes time for me to save up to buy them. This way, I have a lot of time to think and work through an AMV idea before I start editing. It's a pain, of course, because you're anxious to get started, but in the long run, I think this does a lot for "keeping up steam" and making good AMV's. Even when I expand my anime collection and start making AMV's with the source I already have, I hope to keep up this habit of working through an idea thoroughly before even ripping the footage.
At the moment, I have too many AMV ideas to count, and about 7 or more that I seriously intend to make someday. It's a pain not to be able to start editing them, but there's a lot to be done with the meantime; thinking through the concept, plotting out the storyline, watching lots of other AMV's for inspiration, reflecting on how to use effects, wathing anime, etc etc. All this means the video will be that much better once it's finished.
Now if you don't have a limited anime collection or a tight budget to help you with this, you'll just have to rely on good old-fashioned patience...

I currently have eight different almost empty timelines and two mostly finished scripts that I haven't started ripping footage for yet. I occasionally open up Premiere and stare at the mostly empty timeline for 10 or 15 minutes until I start feeling depressed and go cry myself to sleep. Does that count or am I using and overly broad definition of 'work' here?

There's a higher chance that none of the videos that I make end up not being finished at all if I actually edit a few at the same time.
Sometimes I do it purposely but usually on the same concept. It's just that I might have an idea for a video, but in terms of music perhaps I have too much to choose from and there's nothing left to it but actually edit and try on those music tracks I've picked... it hasn't worked too well yet...
So in summary, I'm a one project at a time kind of guy.
