I'm a little confused What's the true grade of the amvs? Is it the star average or the star score?

Star average is the actual (raw) average.
Star score is an adjusted average using some sort of weighting. I'm not sure if the type of weighting was ever disclosed or explained.
EDIT - doing a forum search shows it's just a Bayesian curve adjustment according to Phade in 2005.
