I like all of the stuff by The Pillows on the FLCL soundtrack. Also I like a lot of the Hellsing soundtrack and Noir soundtrack. From Excel Saga, I love the opening song, called Ai. And from Read or Die I like Read or Die No Teema, the long version. From Onegai Teacher I really like the opening song, Shooting Star, as well as Sora wa Takaranai.

Chousenki Kikaioh opening (aka Tech Romancer. Was a game, not an anime, but oh well)

Well if I really had to choose, It would more and likely be from the anime Angelic Layer - The Starry Sky (Techno Remix) hands down.
