They're not necessarily in minor, but some of the prettier songs that I've enjoyed are:

Never Dying Flower, from Full Metal Panic
Many tracks from Utena, especially the ones related to "In the Sunlit Garden"
The ED from Pretear--a nice wistful tune
the OP and ED from Air are both really beautiful
the OP from To Heart
the ED from Please Teacher

there is also some really touching incidental music in Please Twins, like the Onodera Karen tracks and "Summer Sky."

This is not anime but it might work, and that is Final Fantasy VII OST. I have it and it cose me about 60 dollars to get. I loved that games music a lot and I usually don't listen to music unless it is on an AMV. Infact I only have 5 OST. But for me it was worth it, I loved that muisc. Try the first disk those songs are peacful. Some personal favorites
