At the moment, I like Cante per Me from Noir. Having learned Latin many years ago I could get a rough idea of what they are saying. I looked up the lyrics to be sure, an excelent and fitting song. I also like Salva Nos.
Another favorite is Obsession from .Hack/Sign. A atrange and techno sounding peice. I had to find the lyrics to understand it even though it is in english.

Where did you say I'm going?.... And what am I doing in a handbasket?

All good choices to be true, but can they really compare to Carnival Babel (the opening to Blue Seed)?
Actually, I still have a fond spot in my heart for Nadesico's opening, You get to burning, and The 13th Month Revolution by Fence of Defense (opening to El-Hazard: The Mysterious World or Magnificent World or....well, the one that didn't suck. And not Wanderers either though that's also a good Fense of Defense song if my Chaiman Kaga-like memory serves me....)Mysterious Tokyo!
Take it easy dangerous night!
Mysterious Tokyo!
Pick me up foxy night game!
Life's short.

Finally getting over the shakes resulting from trying to pick just one.
Has anyone else heard the opening theme from Rizelmine? It's not a brilliant work of art but it's cute and catchy as hell (sounds like the show itself). Think Tsukuyomi with actual lyrics.
And x2 to whoever said stuff by Yoko Kanno, she's everyone's favorite and thus I shan't dwell on her further. Although one of my favorite Cowboy Bebop songs is "What Planet Is This?" and I think my favorite piece from Escaflowne is "Shadow of Doubt," which is mostly cellos. I also like "Neko no Kimochi," which is cute enough to make me cry. I am a sad man, did I mention that yet? It'll come up again.
But my big main serious favorite is probably the many, many Love Hina soundtracks. I managed to compile all of the character songs from the show (OVA not included) onto two CDs, and I rock them very frequently while driving, between the Mars Volta and NoMeansNo. I am a huge sucker for anything Horie Yui sings, and "Yakusoku" makes me cry a lot (sad man alert) even though I can't really understand all the words.
I'm shocked, by the way, to see nobody has mentioned John Zorn's stellar soundtrack to Cynical Hysterie Hour! Except not really.
