Antissa, Tikal, Menouthis, Harappa, Cuzco, and Pompeii by E.S. Posthumus are all great songs with chanting in them. You may recognize these songs if you heard them since they've been used in many movie trailers (most recently Harappa, which was used in the XXX trailer)
I'd also recommend some stuff by Enigma like The Eyes of Truth, Gravity of Love, Sadness (Part 1), Mea Culpa, Modern Crusaders, Age of Loneliness and well...pretty much anything by them.
Might I also suggest some Yoko Kanno songs? such as A Saien, 7 minutes, Black Escaflowne, Dance of Curse, and Into Gaia. I know there's more, but this is all I can think of at the moment.
