Good songs with strings/orchestral arrangements
I have an obession with song with sweeping strings arrangement.
My favorites of the moment:

X-Japan-Art of Life (best string arrangement ever!)
X-Japan-Kurenai
X-Japan-Dahlia (okay, most X-Japan songs have string arrangements)
Peter Gabriel-Signal The Noise

War of the last Wolves in the Kenshin OVA has some great string parts. As does Little Wing, from the last episode of kenshin. Far and Away, by John Williams is good too. (In fact, quite a few things by John Williams).
Some midi's I've found have really good string parts too. Yes, they're midi's, so the sound quality isn't great, but try the songs Maelstrom, Overture, and Night Of the Dragons, from the Dragonlance.com website. Most of the other songs by that artist are good too, but don't have as many strings.

I have to plug Metallica here. I've always been a fan of classical music. I own several Mozart, Tchaikovsky, and Holst suites, as well as some mixes I made of some single pieces. I have also always been a fan of Metallica. I've seen them live, and it was the greatest concert ever (the floor tickets won from the radio station didn't hurt, either). Metallica's S&M is a very good mix of Metallica classics infused with symphonic goodness. I still listen to it pretty regularily today, and I bought it shortly after it came out, which must have been '99 or '00 (unless I'm incredibly stupid, and it came out later. Feel free to correct me). Pretty much everyone hear knows Apocalyptica by now, and they're good as well, though not very "sweeping." I think it's kinda hard for four people to make anything sound sweeping, no matter how good they are.
