is there a technical difference between these, or is it mostly just personal preference? I know there's something about the green channel to black and white in DSLRs or something like that

Not too much technical difference in my opinion but im pretty sure that all those have a slight difference in colour (Australian Spelling) correction. I know that gray scale and the desaturation goes about in a different route of black and whiteing.

There could be slight differences, but whichever way you go about it, you should be able to get the exact look you want by tweaking the levels afterwards anyway.
