Whenever I see a movie that is a simplified version of the book it is based on, I cringe (LoTR, Harry Potter, etc.). My little brother has a t-shirt that says "Don't judge a book by its movie". But (and I never thought I would suggest something like this) a simplified Wheel of Time would be pretty cool.
The Mote in God's Eye might make a good show. As would Starship Troopers - and I'm talking about the book not the laughably terrible movie.
Magician by Raymond Feist could turn out well.
The Memory, Sorrow, and Thorn trilogy by Tad Williams would be awesome.
