My gosh, you all are probly too young to think of Escaflowne, only one of the most popular animes of the 20th century.
There's quite a few monk anime's (medieval, just japan medieval, not Europe medieval) that escape my tongue... a lot of them are fantasy though. Samurai X/ Rurouni Kenshin?? Samurai Shamploo?
