Have to agree with Guilty Gear X (or XX, but that's only a game)
I've purcashed the Eva soundtrack (Theses of a Cruel Angel and that one suicide note song played during End of)
Cowboy Bebob (It's got that whole Jazz/Funk thang goin on)
Quick tip:
If anyone's in San Diego Area, there's a store in Mission Valley Mall called Rising Son Productions.
They sell Models and toys (Evas and Gundams. Harmony Gold threatened lawsuit over the Veritechs), figurines, Art/pose books, Video game soundtracks and of course Anime soundtracks (along with some J-Pop).

My favorite (complete) sound tracks are from Cowboy Bebop and Samuri Girl, Real Bout High School. I have a list of songs that I listen to from other anime seires, numbers untold. But since this is a thread about Sound Tracks, not just anime songs, I thought I'd point that out.

I have the Kenshin Best Themes Collection, which is quite nice, and also like some Lain and Trigun songs. Cowboy Bebop and Arjuna, as well as all else Kanno, too. Oh, and Princess Tutu's and Evangelion's classical tracks 8) The Eva soundtrack in particular has some of the best recordings of Ode to Joy and a few other classical highlights I've found anywhere.

Ok, let me just list them:
Thousand Arms intro (I forgot the name of the song! )
"Illusion" from El Hazard the TV series
"Romancing Train" from Final Fantasy Unlimited
"eX dream" from the X TV series
"Scarlet" from Ayashi no Ceres
"Infinity" from Lost Universe
"Copellia's Coffin" from Noir
"Trust" from Vandread
"Let Me Be with You" from Chobits
"Asu no Egao no Tame ni" from Gatekeepers
I have a lot more, but these are my favorites in no particular order.

Not to be overly redundant and repetitive or anything, but Yoko Kanno rocks. Beyond her stuff, I really like the opening theme to Lain and, for some reason unbeknownst even to me, I find myself turning up the volume whenever the song "It's Gonna Rain" by Bonnie Pink comes on (it's one of the Kenshin closing themes). Oh, and there's this song by Vox--they do this really great rap based off Eva to Pachelbel's Canon in D.
