you wouldn't say akira is a gun fighting anime but you put spriggan? They use guns as much as Akira.

When I think Gun fighting anime it's indirectly or directly focused on a type of gun. ie Jin Roh is a gun fighting anime, indirectly cause of the big ones the officers would use. Or Gun Smith Cats which someone already mentioned.

Spriggan doesn't, it focuses on the main characters ability to kill. I'd say more emphasis was put on the knife then whatever gun he used. or that suit.

Wicked City could be considered a gun fighting movie cause indirectly he had to have that special type of gun with an enormous recoil on it. And then what it did to the demons.

can't remember if cowboy bebop is in teh list, so its in there for sure now. saikano maybe? scryed also has a few really huge guns in it too. i think it was called the big shot magnum or something, but it probably doesnt count as a gun anime. 'the burn up serie's' maybe? i recall seeing a STEYR aug in there a few times.
