What about giant mech animes? Or are they not the type of weapons you are talking about?
Forget the gun or knife, give me an Eva unit anyday...
From your categories though, I would take the fist fighting. I like the Ranma 1/2, Yu Yu Hakusho type of anime. I enjoy the sword fighting too, like in Jubei-Chan. I just like the personal hand to hand fighting, be it with swords or fists. I usually don't find gun fights to be as entertaining...

Guns aren't that easy to use skilfully.
But my preference will always be sword and other bladed weapons. And staves. Basically short-range melee weapons are my favorite to watch.

To watch? Probably sword (or sword variants) battles.
To appreciate for the amazing skill required by the owner of the weapon? Throwing weapons and guns. Throwing weapons are darn hard to get right. I should know, i've tried. Guns are much harder to use correctly (and accurately) than people seem to think (again, from experience).
It's all easy when you're animated.

That's what I said! See, someone knows guns aren't that easy to use!
But Ryan, swords aren't easy to use either. Not expertly. And swords are easier to use than other medieval weapons. So I can't really say which I have more respect for. Swords are definately more graceful and amazing to watch.
