I really liked the Hand Maid May opening. It sounds so insanely cute you can't really help but love it.....or despise it completely.

The intro themes to Lain, Shaman King and Full Metal Panic are among the best theme songs I've ever heard, methinks.

the intor to evangelion. but only because ive watched it so mch times that i know the whole song in english and japanese (and i cant even speak japanese). but argentosoma has a prety cool opening, essiecialy in the begining. haibane-renmie however has a realy boring as batshit type of opening
