If songs from movies count, I'd say "Toki Ni Ai Wa" from the Adolescence of Utena movie. If it's only openings or endings, then I'd probably pick "Namoshirenu Hana", the ending theme to Ai Yori Aoshi.

Hmmm, Most of cowboy bebop's Sound Track is amazing.
Escaflowne: the movie's Sound track is also pretty good.
FLCL has a kick ass sound track, as dose Hellsing.
There are some bits of .hack that i like a lot.
RahXephon has a very interesting sound track. And the first 12 seconds of the Nadesico opener are great (after the trumpet part i usualy skip forward to beggining of the episode.)

i really like some of the ranma songs but i dunno the names. also theres one from dbz ( super saiyan 3 theme). There's some from yu yu hakusho and Tenchi Muyo and Naruto.
