Hideaki Anno... he's awsome. Either he has so many problems that he can split his own problems up and fill mutliple casts of characters, or he's really good at knowing humanity. Either way, his stories are great. Some people think that Anno was some drugged up guy on the brink of suicide making Evangelion and killing himself after making his one and only series... but he also did Kare Kano! And... he's still alive!

Personally, I don't think I have one; although overall, I'm a Gainax fan to quite an extent, and I'd like to get into Clamp more.
The Birds are using humanity in order to throw something terrifying at this green pig. And then what happens to us all later, that’s simply not important to them…

Gainax fan for the mind rape, Hiroyuki Takei for the character designs, Rumiko Takahashi (Takahashi Rumiko? Whatever...) for sheer funness. Oh, and whoever did Fruits Basket makes me happy.

It really depends on the purpose of the show though. I don't know that I've encountered any truly well-crafted stories in anime thus far (though Studio Ghibli stuff is good). I mean, I love Shaman King, I love Inu Yasha, I love Cowboy Bebop... but to actually analyze the works, the stories just don't feel... well-crafted. I'm probably just a lit snob--these aren't supposed to be great works of literature, after all. I think the closest thing I've seen to a well-crafted story is FLCL, believe it or not... it's one of those things that just keeps growing on you...
