Haibane Renmei - Simple and enjoyable on the surface, yet filled with questions about the metaphysical that bog down so many other bloated and pompous anime. Plus it has NO Shinji character, that guy pisses me off.
Love Hina - It's oldschool these days but it is still what so many current shows are based on. Go with the original.
Naruto - A bunch of bratty ninja run around and fight other bratty ninja. battles take place over a period of months. Long drawn out conversations in the midst of supposedly deadly duels.. great stuff. Decidedly addictive.
Ai Yori Aoshi & Ah My Goddess - Very similar in concept, they are basic romance anime. Sometimes you just want to watch something NICE for a change with no aliens or ninja, or world smashing mecha in it.

As for me, my favorite anime is a tie between Ghost in the shell:Stand Alone Complex, Because it a great Action anime that also makes you think, a rarity in action animes, (and im a Major fan, double meaning) and Mai HIME, because its got romance, comedy, cool creatures(especially Kagutsuchi) Some REALLY cute girls, and a slight twinge of fanservice, but only a little.
