One of my favorites that hasn't been mentioned is Di Guard, it starts out very humorous and turns into a pretty good mecha series.
Where did you say I'm going?.... And what am I doing in a handbasket?

You should also check out the Second Season of CLAMP's Television Series version of Magic Knight Rayearth (or the Rayearth OAV).
Both of these feature a lot of Giant Robot action.

The original Macross series had it all. Not just the transforming fighters, but all of the ground support mech that would later be adopted by Battletech. It also had a sweeping storyline and some of the most beloved characters in anime.
It's later incarnations were great too, especially Macross Plus and Macross Zero.
Full Metal Panic also drew me in, not for the mech design, though those were good too, but for the situational comedy that routinely occured with the high school students.
