I actually enjoyed the Slayers' series' dub. Once in a while, Xellos' voice got on my nerves, but he's hardly around, so it wasn't enough to switch to English.
Petshop of Horrors was nice. They change the translations around a lot. But it actually made it even more enjoyable.
Soul Hunters (Houshin Engi) is the best dub I've come across. I really enjoyed watching this in English. In fact, I've watched it more times in English than in Japanese.

I would like to add that the Tsukihime dub for the first volume is pretty damn good. So far the script was left unchanged, but the VAs were able to say their lines very smoothly and more realistically without giving out annoying pauses just to match the lip-flaps.

GITS: Stand Alone Complex's dubs are very good -- both for the TV show and for the PS2 game.
I liked how BANDAI went the extra mile and brought back Richard Epcar and William Frederick to dub. Replacing Mimi Woods with Mary Elizabeth McGlynn was another great choice -- they sounded similar even back when they were doing other VO projects together (like Squaresoft's The Bouncer).
(That raises a question: just where did Mimi Woods go? The latest project I saw her in was The Bouncer, but after that she just... vanished without a trace apparently. )

I'd agree with Cowboy Bebop and Hellsing (though Hellsing is just on hearsay, since I haven't seen it). Some other good ones:

It's Sherlock Holmes stories, only with dogs instead of humans. Since it's set in England and based on British source material, it really sounds better and more natural in the dub. Sherlock Hound is one of the only series that I've watched all or almost all of the dub, along with Bebop, the 1st 2 seasons of Sailor Moon (hey, the subs weren't out yet!), and ROD (once volumes 6 and 7 come out).
