I love it when someone refers to Ghost in the Shell as "Old School." LOL, Astro Boy and Speed Racer are "old school".... so are series like Space Cruiser Yamato.... Now onto the list... these are just a few that jump out of my head just this moment.
Space Cruiser Yamato - Accept no substitutes and Star Trek Voyager ripped it off years later.
Super Dimensional Fortress: Macross - Is it a modern retelling of Noah's ark or the story of how a girl stops a war with love and her songs? I think there is a lot of cool transforming mecha battles and a great love triangle.
Galaxy Express 999 - The wonder of seeing the galaxy as a child captured into this touching series.
Mobile Suit Gundam - The first time war was attempted to be portrayed realistically (even in a sci-fi sense)
Macross Plus - Yokko Kano shines in this tale of two former friends fighting to with a fighter contract and the love of a woman they split over years ago.
Royal Space Force: Wings of Honneamise - an alternate world's first steps into space...wonderful...
Azumanga Diaoh - the closest thing to the feel of a Calvin and Hobbes comic strip.
Cowboy Bebop - billiant music with the most consistant and entertaining scifi world and tales in recent memory. Style and substance.
Wolf's Rain - Genre breaking... and brilliant in every way...
Neon Genesis Evangelion - it stood the anime world on its ear in the way stories are told.
His and Her Circumstances - the most truthful and realistic love story I can remember told. plus very funny
Nadia: The Secret of Blue Water - Overlooked classic that blazed a trail for many things that other series take for granted. Evangelion's test run.
Sailor Moon - Not just a monster of the week series...the series developed depth in dealing with loss, sacrifice and love.
Revolutionary Girl Utena - Fairy tale taken dark and twisted....a story of love, friendships and destiny....brilliant series with a hard impacting ending.
Serial Experiments Lain - Stands up to repeat viewings. Plays with our mind in the good way.
Ghost in the Shell - compelling storylines that ask questions about tomorrow we should be asking today.
Graves of Fireflys - The tragedy of war close up. Bring the tissues.
Akira - Mind bending for its time, showed us what could be done in animation if we only opened our minds..
Dragon Half - Funniest two episode romp that is out there...
The Irresponsible Captain Tylor - After all of the serious space dramas it is just good to know that this was out there waiting for us.
FLCL - Not just a smart, funny, deep series, but it knows and revels knowing that it is... plus The Pillows are amazing...

I must admit, I have a very limited list of Animés that I have read or watched, so here's all of them, and I hope that one of 'em helps you.
Wolf's Rain-only seen one episode, but it was good.
Princess Mononke-one of the best movies ever
Gundam Seed and/or Gundam Wing-Deep, but violent!
Inuyasha-funny, yet deep, violent, yet peaceful, aka, fun!
Ragnarok-only read first 2 books, but it's funny, interesting, and for u guys out there, has some girls in...revealing outfits, but nothin too bad.
Saikano-yet again deep, yet violent, caution-no minors for this book, although the sound effects are funny. lol

If you need an Anime, and you want to know a funny one, here's about the funniest one:
Ranma 1/2
Very attypically Japanese - it's more like an American sitcom. Few episodes have a whole lot to do with one another unless a new plot-device or character or introduced (episodic - it's not like most Animes with a cliff-hanger style that leads from one episode to the next). It's non-stop hilarity, with enough fanservice and cute girls to keep any perv happy, though I suggest watching the Dub rather than the Sub - the emotion of the voice actors is a lot greater in the dub, and so much relies on you watching the characters and the physical comedy that the subtitles often get in the way (It's one fo the few instances where most otaku would agree with me that the dubbed version is better and much funnier).
If you get a chance, pick up a tape or DVD of it from your local video store - it's almost guaranteed to have at least one. If you can, I suggest the season named Hard Battle - it's my personal favorite season.
