The opening from the Ah My Goddess TV series is one of my favourites. It actually suits the series as well which is more than you can say for some openings.

Egads... I am such a sucker for sad/soft anime music. Of course, I've only heard a few American bands do music for anime; ie, Mr. Big for Hellsing.
