Anime with a REALLY good love story?

You only really gave us one example (Chobits) to work with here..
Off the top, check out Miyazaki's work. Whisper of the heart is awesome, Porco Rosso, Kiki's delivery service, Laputa, and so on. I'm surprised nobody has mentioned them yet.
Also..
Ah My Goddess is pretty good. I prefer the original shorter series (ova?) and the movie. The new stuff is ok too, it just covers a lot of the same ground.
Victorian Romance Emma isn't bad. It's old school storytelling, and a good break from bouncy boobies.
Card Captor Sakura (never ever watch the bastardized american version) is also good.
When you're ready for the bouncies again, Love Hina practically started the whole avalance of shows that copied it's formula. If you watch it, you'll see why.
I've always liked the Ai Yori Aoshi series, both the first and the second one. While it certainly has it's cheesecake; the show isn't about the pie.
Voices of a distant star is ok.. the character design sucks though.

Revolutionary Girl Utena - Just about everyone is in love in this series... everyone wanted to be loved, but some when through good and bad things to get it.
Nadia: The Secret of Blue Water - I think Jean's pursuit of Nadia as difficult and as prickly as she was done very well.
I am a big fan of the original Macross series, but I wouldn't call it a love story. I would call it a 36 episode string along story. Poor Hikaru.

I concur 100%. I haven't seen any Kenshin before or since, but that 4 episode OAV easily sits in my top 10.Yoshiyuki Inokuma wrote: Samurai X Trust and betrayal...

Another you might like if you thought that was good is Jin-Roh: The Wolf Brigade. I won't go spoiling anything, and just say watch it.
On the lighter side, I really really enjoyed Maison Ikkoku, and still think it's probably Rumiko Takahashi's best. I haven't seen the anime or the movies, but the Manga is absolutely brilliant.
Finally, sorry for the thread resurrection.
At least I'll definitely try to into the other recommendations here.

did someone say kare kano yet? too lazy to check. it's really good, i have some of the manga. it runs longer than the series and, i'm guessing, is way better since the series ENDED WEIRD! i hated it. it's like they just woke up one morning and said, 'hey, let's stop making the anime. >:3'. oh and fruits basket is really cute it has different love stories in it. I LOVED HATORI'S. it's really sad too.
