I'd suggest Full Metal Panic (no relation to FMA), because nobody can say no to a good mecha series (although it's more of a highschool comedy than mecha...but still good)
Personally, I liked Gundam Seed (and the two disks of Gunndam Seed Destiny released in the US so far) but it seems kinda hit or miss for most people (story is similar to Gumdam Wing I hear)...I'm a sucker for mecha
Ghost in the Shell: Stand Alone Complex (both seasons are great) although you parents may find some scenes objectionable, it has a good story...and the opening theme is composed by Yoko Kanno (can't go wrong with Yoko's music)
Gungrave was fairly good (some of the Trigun guys worked on this series), but it's not a "pick me up" type series
if the last two aren't your cup of tea, you may want to look into s-CRY-ed
If you liked DB/Z, FMA, Naruto, etc (pretty much anything on adult swim)
the story isn't too sophisticated...lots of shoot first ask questions later attitude, and the ending was pretty good (just what I wanted to see)
