As a cranky aside, you'd think someone who's so invested in how to pronounce "Eureka Seven" would know that the plural of "anime" is also "anime."

The first season of that is pretty good, especially if you know something about mid-20th century military history (or, to put it another way, are in on the joke about the characters). Sky Crawlers
It isn't filled to the brim with aerial battles but the ones in it are very intentive to detail. Also, the story more-so focuses on the pilots rather than the battles. Either way, it has good material.
