The biggest influencers seem to be Attack on Titan, Sword Art Online, and Madoka. I didn't watch much Romance, so I'll leave that to someone else.

I don't get how Kill la Kill is a "quirky" anime, but it's easily the best out of that list. It's just a triumph in animation history.

-Usagi Drop
-The Disastrous Life of Saiki K.
-Your Lie In April (am I really the first to mention this?)

You're also free to make a case for Dragon Maid, Psycho-Pass, Aggretsuko, etc., other series like 1/10 as popular as Sword Art Online was and still is.

tl;dr Tsuki ga Kirei is good. Please watch it.

I can second this, the show really is a breath of fresh air.

Other than that, shows like Angel Beats!, Haikyuu!! and Shigatsu wa Kimi no Uso are some prominent candidates that haven't been mentioned. There are also shows that feel like a lot of people forgot about, like Sakura-sou no Pet na Kanojo or Hotarubi no Mori e.

Personally, I feel like it's not really fair for the hidden gems of the medium, since popularity and quality don't always go hand in hand. So I would like to show some love to shows such as:
Ping Pong the Animation
Sakurada Reset
Shouwa Genroku Rakugo Shinjuu
Hoshiai no Sora (This one is still airing, but I definitely think it is high up there)

And one of my favourites, 3-gatsu no Lion, albeit it has garnered some popularity over these few years.
