1. Azumanga Daioh (funny, fairly safe)
2. Niea Under 7 (very safe, but probably has more appeal to adults)
3. Irresponsible Captain Tylor (a pretty good show, also fairly safe)
4. Ikkitousen (because, hey, if you're up at 2 AM, who doesn't want to see panties and violence?)
If I run out of episodes, supplement with OVAs and movies (such as Oh! My Goddess or Agent Aika ). Maybe show a block of "Sexy Commando Masaru", also.

Well, considering I became more interested in anime as a result of what Adult Swim was showing, I would raid their old Saturday night line-up for stuff.
12am: Inuyasha-This is a decent time for this show, seeing as how the series is nice and long
12:30am: This gets more complicated: for this part of the show, I'd rotate between Cowboy Bebop, and Reign. When one series ran to the end, I'd switch to the other, and then back again. You really can't watch these series' over and over again, like CN's DBZ syndrome, or the viewers really lose interest
1am: I'd run a slew of mini series OAVs, and short series' in this part. By now, those who aren't asleep just want something amusing to keep them occupied before they crash. So, here's the list: Gun Smith Cats, Armitage, Dominion Tank Police, New Dominion Tank Police, Macross Plus, and what the hell, Gundam 0083 (this show has just enough tech in it, and a decent animation that it hooked me instantly, while it limits the mushy crap, which is all too prevalent in the other UC shows).
1:30am: Bubblegum Crisis Tokyo 2040, Big O, Tenchi Muyo, Slayers, and Serial Experiments Lain. These shows are long enough, and entertaining enough, for that matter, that rotation through the whole list won't gnaw on the viewers' nerves.
