The Animatrix was done by several well known directors. Watanabe, Morimoto, and Chung being three I can name right off the bat.

As for the movies. There's loads of anime inspiration all over the place. There was a major topic in the old Manga.com forums where pretty much all the anime inspirations noticable, if in fact they were inspired or not, were pretty much summed up.
