Some good dubs that I have seen besides some that have already been mentioned.
Full Metal Panic, I thought it was dubbed very well.
Steel Angel Karumi, DVD 3 is the best with the way they did Krinka's dubbing.
Hellsing, The British Voice actors rock, Crispin Freeman does voice Alucard and does a fairly good job at it.

I acctually thought the Chobits dub was decent...
Full Metal Panic is okay
I like some of the voices for Trigun
Cowboy Bebop
X TV wasn't bad from what I saw...
Grave of the Fireflies has a good dub
I only saw Spirited Away in theaters so I can't compared it to the original, but the dub was okay

Yeah--I liked Bebop (though it took some getting used to--but now I actually like Spike's voice better dubbed than subbed). Ed would be the exception to that.
Beyond that, yeah, Steel Angel Kurumi's dubs are hilarious. The voices aren't all that great, but yeah... a friend and I randomly rented the third DVD (it was all they had) and we watched it with both subs on and dubbed... wow... just comparing the two... *twitch*

Of every single dub I've seen, I simply COULD NOT watch the XTV one. And I was perfectly fine sitting through the Kenshin dubs. I can't believe you all like XTV's dub....
And, in contrast, my favorite dubs would have to be Angel Sanctuary and X/1999
