I'd definitely have to agree with Sailor Moon, DBZ, Gundam, and Robotech/Macross on the basis of "they're just too damn well-known," and Evangelion because it'll put your heart, brain, and balls in a blender. I'd also add Pokemon (hey, even I'VE seen the first episode) and Yu-Gay-Oh to the former category. And Voltron.
CBB is like an animated version of Joss Whedon's Firefly, except worse, while Ghibli's movies are more "cool" than good.
FLCL is mandatory because it makes Evangelion seem clear and logical by comparison
Also, everyone should watch at least one episode of each of the different Power Rangers series.

There are so many sub-genre's of anime that this is a difficult selection. It depends on what you are interested in, unless you want a sampling of what is out. I would not only chose what would be considered the better series of their respective subgenres but ones that helped set the mold for all of the other series to follow.
Watch Martian Successor Nadesico or Excel Saga and you can tell that they expect the viewer to come to the table with a certain amount of knowledge already about anime.
I don't agree with everything on the animeondvd.com list of recommended anime, but I agree with a lot of it.
