Give me a reality tv show without fighting I'll show you five animes without fighting. Yes, there's a few in the existential mess like Angel's egg or Cat Soup and of coarse alot of Studio Ghibli stuff. Of coarse there's alot!! I'd have to say that Baki the Grappler is probably the first that comes to mind when you think about "Fight Club" animes.
Then there's also Getbackers. I've never seen an actual episode, but from what I've seen in AMVs and what people tell me, it's on the streetfighting end of things like Baki and Ikki Tousen (I like the comic better, but only because it's a borderline-hentai with fighting suspense I haven't seen since Yu Yu Hakusho or DBZ)
If you're gonna look at Baki, look for the newer show. I have to say that the character design of Baki is a wee bit different than in the comics (HE LOOKS NOTHING LIKE BAKI IN RAIJIN!), but when it comes to animes that are little more than Bulky-Baddass-A kicking the crap out of Bulky-Baddass-B, visuals are a must; nothing against Saint Seiya, but I gotta go with the better animation and graphics if I wanna see a brawl (Seiya wins in everything else, but you get my drift).

At any rate, my point is that most anime involves fighting, so trying to find a fighting anime is much like looking for candy in the candy store. You're going to find it.
Try classics like Tekken and Street Fighter. It's good stuff.

what? there's alot of Kiddie, Magical Girl (ok quick fight scenes, like *poof* you dead... and but some don't have any fighting!), Romance and Seinen (if I'm saying it right... breath of life shows... like Honey and Clover) Animes without fighting. Your probably only thinking of Shounens and/ or Shojos.

Hajime No Ippo - An excellent series centered around boxing
Ayane's High Kick - Older fight show in the spirit of Grappler Baki
Grappler Baki - Fight show featuring lethal doses of testosterone
King of Fighters Another day - Short series in the 'street fighter' style, but with awesome animation
Street Fighter - Based on the game, but with really ugly characters and debatable animation
Ikki Tousen - Hot chicks in skimpy clothing do battle
Tenjho Tenge - Hot chicks and some guys do battle
Ninja Scroll - weird ninjas do battle
Basilisk (Kouga Ninja po?) - Really weird ninjas do battle. This show is bloody beyond comprehension.
Berserk - A guy with a really, really big sword uses it. A lot. Stop watching TWO EPISODES BEFORE THE END. Trust me on this.
Rouroni Kenshin Ova - A guy with a sword, kills people and stuff happens. Sad.
Appleseed - In the perfect city of the future, there is a lot of death.
Evangelion - A whiny boy gets to save the world and get all emo. This is required viewing.
RahXephon - Pretty much like Evangelion, but with better animation and no whiny ass shinji. The movie has a more romantic angle than the series.
Macross Zero - Mecha done right. Seriously, some of the best transforming mecha scenes I've ever seen.
Gundam - Spawned about 35 different shows. Has mecha, emo and death.
Full Metal Panic; The Second Raid - Short but awesomely good.
Gunparade March - When the world has been at war long enough that military academies are a way of life and using mecha is a high school requirement. More romance oriented, but still lots of good action.
Eureka 7 - If you had mecha, would you use if for snowboarding clouds? Hell yes.
Glass Battleship - in a galaxy far away aristocrats solve their problems with guns. Lots of them.
Last Exile - Guns are meant for using. People are meant for dying. An excellent show
Starship Operators - When warships are run by hot chicks that broadcast battles to make a living you get a cool show apparently
Stellvia - Little girls with a penchance for falling in love save the world, a lot.
Bubblegum Crisis - To be a mech pilot, you should be hot looking and pretty young. And a chick.
Patlabor - what happens when you do away with the hot young chick requirement
Wings of Honeamease (sp?) - the right stuff, anime style.
Jin Roh: Wolf Briagade - in the future swat cops have really bitchin armor and carry a really really big gun.
Hikaru No Go - in the deadly game of GO, all bets are off
Eyeshield - in the deadly game of american footbal, all bets are off
Capeta - in the deadly world of cart racing...
Buzzer Beater - in the deadly art of interstellar basketball against a demon army... all bets are off.
