IIRC...Android Kikaider has at least one episode with at least one scene like that...but I couldn't say which one (saw it a long time ago when it was showing on [as])

if nothing else...the main character almost always has a guitar on his back

All-Purpose Cultural Catgirl Nuku Nuku TV. Any episode. There's a dude with blonde hair who carries a guitar everywhere and plays it prolifically.

Theres only one season of Sailor Stars. Its the name of the fifth season of Sailor Moon. The seasons aer Classic->Romance->S->SuperS->Stars. Stars was never released in the US so you're gonna have to get some R2 dvds.

Excel Saga has an episode (21, where they parody rock anime) in which Ilapalazzo tries to learn to play the guitar and there is a guy that actually well, sorta does.

Nana is a great anime and one of the main characters is the vocalist of a punk-band. So there are some guitarres.
And in one episode of Suzumiya Haruhi she also played a guitare and the 2 song were pretty damn good too.
