One that I would suggest is Trigun, but it is used alot.
Also,Cowboy Bebop, even though there is more than one main character it is not hard to focus on one.

Um, Azumanga Daioh is a carefree anime thats fun to watch.

Bleach has a great story line and cool characters.

Neon Genesis Evangelion has a deep philosiphical storyline that is hard to understand, but a exelent anime.

Guyer: The Bio-Boosted Armor. Under all the fun violence and evil corporations is a story about a boy becoming a man. Dealing with the death of friends and family while dealing with everyday life.
