Now, by "Gundam", what do you mean? It seems a lot of the folks here immediately jump upon Gundam Wing and only that.
It's hard to dismiss all of the Gundam universe (almost 25 years' worth) in one fell swoop. Some bits of it I don't like at all, such as Gundam Wing and the F-91 movie, and other bits I love, like Char's Counterattack and 08th MS Team. And there are bits I've never seen but want to, like Z Gundam.

AKH: I'd recommend watching the entire TV series, keeping in mind that the final two episdoes of the TV series were not what the creators intended. I view it as an alternate ending that shows what might've happened if Shinji had... well, I'm not going to spoil.
After that, watch End of Evangelion for the ending that is everything the creators intended and maybe then follow it up with Death to get a refresher course of what the TV series was from different characters' points of view.

Evangelion is pretty good the first time through but it doesn't have much replay value. Oh, cant forget the mind raping. ^-^
