AFAIK Gundam is just a franchise and different teams buy into it every now and then.

Ok, here goes...
Universal Centruy Gundam...
My favorite timeline, and (in my opinion) the most realistic. My favorite out of this is 0080:War in the Pocket. The empasis on personal story lines instead of mech fights made it a surprisingly in deapth show. 08th MS gave a very nice "soldiers eye view" of the war, and is probably my second favorite. 0083 was ok, but the characters were far too onedimentional for my tastes. They never seemed to evolve, though the storyline was fun to follow.
After Colony Centruy...
I've only watched Endless Waltz, and while it was good, it just seemed too idealistic. Maybe if I had seen the series i'd like it more, but as is... Good, but not my favorite.

Kickboxing mecha. Blech. That's all I can say. I've heard that the story line and character development is exelent, but the mech fights just turned me off and i never really got into it.
Gundam SEED (don't remember the timeline name)...
Saw a couple epps, but haven't gotten around to watching more. What I saw, it's a retelling of Original Gundam. Kind of Original Gundam's storyline coupled with Gundam Wing's marketing. interesting idea, but the retelling of an old story rubbed a lot of old fans the wrong way.
SD Gundam (don't know this timeline either)...
Forget what they show on cartoon network. Just forget it. SD is a parody on all the other gundam series. Mostly Original Gundam, but the others are in there too. It's also a political satire. Most of this is edited out for public brodcast on CN so it comes off as a 'stupid kids show'. to get the full effect you have to know the other timelines fairly well and watch SD unedited.

To answer your first question I heard (not the heard part) that the orginal creator of gundam said that anyone could create a gundam series regardless, without infringing on the copyright.
