Akira, can take some credit for anime in america, truly a movie legend, know by 99.9%(personally I think overreated, but i can't argue it's statis)
Mobile suit gundam, it started one of the biggest anime series ever, plus it’s considered an all time great
Dragonball, note just Dragonball, not Z
Doremon, over 1,000 shows, over 30 years, close to 50 movies, the most common anime figure you’ll see in japan, and it's still going on, that’s a legend
Nausicas of Valley of Wind, THE LEGEND OF ANIME if there was one
Ninja Scroll - the movie and character are both legendary. The ultimate in samurai anime.
When you think The Definitive Anime, I also can't leave out these below as almost like legends:
Neon Genesis Evangelion - a true classic and must see.
Lupin the 3rd - been around forever, huge number of shows and movies, very popular. Also the movie Castle of Cagliostro is one of the most well known and well received anime movies.
Ghost in the Shell - basically akira, but just a level down
Escaflowne - an absolute classic, but it seems to not get as much credit as it really should.
Sailor Moon - another classic, especially of the romance genre, it's a legend of that genre. Also this starts a lot of people off.
Macross - another just classic among anime, but overshadowed sometimes but other mech shows.
Nadia – Secret of Blue Water
Vampire Hunter D - D himself could go down as a legend, but this is a must see for anime fans and a true classic
Tenchi Muyo - started the 1 guy many girl craze, plus it's had staying power, and is just very popular.
Hiekieo Mizukaioe - Must be mentioned when you talk about Definitive Anime, b/c this guy is Anime.
