I do not know if the obvious Cowboy bebop and Trigun have been said however.. they have some pretty good gun fights.. Not as intense, but still decently fast.
and I hate to admit it but Advent children had some pretty cool fight scenes and action and whatnot.. >_>.. King of bandits jing wasn't horrible in action either when I think of it.
