I like the opening from Ayashi no Ceres. The song fits great to the Anime.
I also love the RahXephon opening. The song from Maaya Sakamoto is so beautiful ^^

Forgot one ending theme that I'm fond of:

Sensei no Ojikan - Furare Kibun de Rock'n'Roll (DROPS)

The song itself isn't awesome, but combined with the closing animation, it just produces an effect of sheer, overwhelming <I>cuteness</i>. Cutest closing sequence I've ever seen.
