I'm with Bardiel about Outlaw star. It really sets the tone for the show.

Favorite openings:

Rahxephon
Excel Saga (Funny stuff)
Love Hina
Neon Genesis Evangelion

Favorite endings:
Vandread (By far the funniest and by far my favorite)
Noir (It's quiet and subtle)
Excel saga (Every episode EXCEPT 26.

The Vandred ending borders on hentai there's just a little too much fan service there mind you the whole two series are like that they never actually show anything too bad but man do they imply it.

Most of the anime I've seen have pretty good openings and/or endings.. I'm partial to the recent anime "Bleach" OP though. It's quite stylish and edited (in related MV terms) nicely, set to a hip song. My $0.02.
