I realy love the saint version of "Lilium" (Elfen Lied) but also the opening version is beautiful

The Romeo X Juliet Opening Song and the Single Track are both impressive. I'll recommend Xenoglossia's Ending Song also. It's enjoyable.

While not every song in these selections would fall under the "beutiful" category have to say the soundtracks as a whole contain some of the most beautiful and moving music around

Shinseiki Evangelion
Cowboy Bebop (or anything Kanno)
FLCL (the Shinkichi Mitsumune stuff, not the Pillows stuff. But if we were talkin about the most ROCKIN soundtrack.. well..)
Key the Metal Idol (am I the only one who's seen it?)
Please Save My Earth (same question)
Mononoke Hime (and most other things Gibli for that matter)
