yea but in the episode where tohru says his name he gets a blushy and poof he's a rat and tohru's like "IT'S NOT 'CAUSE I SAID HIS NAME!! I DIDN'T DO IT!!" Like it's a totally embarassing thing... I was sick before but he had just recovered...

No, see, he was still sick when Tohru said that, and transformed randomly in his weakened state. He may have been feeling better, but he was still sick. Remember that Yuki has weak bronchial tubes- it's an extended condition, not a periodic bout of sickness that he could quickly recover from. When Tohru said his name, it shocked him (and yes, he was happy (but not sexually happy), and probably because of the extra strain on his body, he transformed. If he had been healthy and she had said his name, he would just be happy, but wouldn't have transformed.
And the argument that the jyuunishi can't "get happy" and have sex is obviously disproven by the fact that Kyo had a grandfather who was a jyuunishi- he couldn't have been Kyo's grandfather if he hadn't had children, and he couldn't do that without having sex- and no mention is made of Kyo's grandmother also being part of the zodiac, so we have to assume she was a normal human.
