Well the vampired in ep 2 did in fact drink the peoples blood, that is why they had blood on their mouths. (or was that just red paint.)
And I wouldn't call alucard dignified so much as he is in posesion of a ferice superiorety complex which

gets him killed in ep 12 or 13.
And lets not forget that the last seal was removed for a limited amount of time, so after Incognito was dead the seal was back where it was. If it were PERMENANTLY removed, the yes, alucard would have left and been number one on Hellsings most wanted list.

I do not believe the seal lifting was temporary. I will rewatch at some point, maybe to check. And the fact is the vamps did drink SOME blood, but they weren't drinking all of it, because they couldn't have with how many people they killed. They were just drinking some from each person... basically killing for sport. And Alucard IS dignified, he has a lot of dignity as a true vampire, which is why he likes killing the FREAKS so much.

BTW, to help prove my point about Alcaurd in hellsing, in ep 12 just before he shoots that one member of the hellsing order, he gets this big smile on his face. This is one of the things that bugs the hell out of me about that character.

Who cares? The guy wanted Alucard to kill him. I think Alucard was smiling because of how the human guy was behaving. I distinctly remember Alucard praising him about his bravery or some such thing.
