My favs of the moment are....(drum roll please)

Opening - RahXephon this one shot up after I got the DVD and now I think I've watched the opening more than the eps hehe
Ending - Naruto I know it's in english and some of the pronounciation is bad but I like it all the same

My favorites (at the moment):
Opening: Trigun and Inu Yasha (both good)
Fruits Basket (silly but cute)
Ending: Kikaider (ending from the first couple of eps - some of the
best anime music Ive ever heard - its almost haunting)
Trigun (I love the ending, I dont quite know why, I just do)
