Might as well put in one that has gone unmentioned
Suikoden game series. Each of the games with the exception of the 4th (hoping the tactics game being made now actually finishes the story this time) has a rather intruiging plot. Each game is in the same universe so it wouldn't have to be a rehash of the games to make sense.
(I do admit though I have to agree Kamatari Damacy I would watch JUST because it would probably have a neat soundtrack. That could redeem it even if it was mediocre)
If you could take any video game and make into an anime...

Devil May Cry, 1 or 3 or mix of both. Ummm Definately Suikoden excluding the 4th one. Silent Hill..dont think they could pull it off as a *scary* anime. One of the Dynasty Warriors or Romance's would be a really good anime if they did it right.

I think Romance of the Three Kingdoms has been done as an anime some time ago. When exactly, I'm not sure, but I believe that one rendition was called "Great Conquest: Romance of the Three Kingdoms" and was released by Streamline Pictures under Orion before they went bankrupt. How old that is, I'm not sure.
I think Romance of the Three Kingdoms has less to do with the game and more to do with the actual legend. History is legend man!
