At The Moment:

Comedy - Excel Saga
Romance - (not really sure I can say I've got one) closest I can think of is Tenchi Muyo!
Action - Hmmm...tie between Akira and Cowboy Bebop *will occasionally rewatch just the church scene in 'Ballad of the Fallen Angles' for the Hell of it*
Fantasy - Record of Lodoss War OVA
Horror - Vampire Hunter D
Mech - Gundam (in particular, three-way tie between Char's Counterattack, 0080: War In the Pocket, and Zeta)

Comedy - Love Hina - I know it's perverted, but that's what makes it funny really

Romance - Ah! My Goddess - plain and simply the best romantic fan-driven anime. Too bad it only got a 5-part OAV and one movie.

Action - Yu Yu Hakusho - better than the whole Dragonball series put together

Fantasy - Card Captor Sakura - Well all things considered, most animes are really all fantasy in their own way. Card Captor Sakura just happens to come to mind if I think of the word "fantasy".

Horror - Neon Genesis Evangelion - Don't tell me that one scene with EVA 01 eating the angel wasn't just damn freaky.

Mech - Vandread - One of the best in recent years. Takeshi Mori really did a great job. Computer animation looks almost flawlessly clean as well.

Story - Phantom of Inferno - OK so I'm a little obsessive over it. But it's just that damn good. This has remained #1 on my list for 2 years and 10 full series later.

Comedy: I don't watch any strictly comedy animes, but the funniest anime I know is Yu Yu Hakusho(who wouldn't laugh at "Spirit Sword, Get longer!")

Romance: Don't watch strictly romantic titles either, but closest is Escaflowne

Action: Cowboy Bebop

Fantasy: Escaflowne or Inu Yasha

Horror: ?

Mech: Full Metal Panic!

Samurai: Rurouni Kenshin
